TO COOK A HAM
TRY THIS METHOD. j Soak a ham overnight in plenty oft water. Next day drain and dry well., Make a thick paste with one and a half; cups of flour and cold water. Rub thia over the ham, then wrap in a fine cloth and sew securely. Drop into boiling water and cook rapidly for 10 minutes then simmer gently for 3 hours. Allow ham to stand in stock until cool, then remove cloth, paste, and rind. Place in a baking dish, mark into squares with a sharp knife, sprinkle with brown sugar, stud each square with a clove, and sprinkle over a small bottle of cider. Bake in a moderate oven fori about hours, according to size of’ hame. Baste well with liquid in baking* dish to give a nice glazed appearance. I The hame can be baked instead of. boiled, but double the thickness of] paste, and allow 25 minutes to each] pound. Finish with brown sugar as dir-’ ected. and if liked vinegar may be used instead of cider.
