BOSTON CREAM

HOW TO MAKE IT. Take lilb sugar. 2oz citric acid. 1 Quart boiling water. 2 whites of eggs, essence of lemon, bicarbonate of soda Method: Put the sugar and citric acid into a jug and pour the boiling water over them. Cover and stand until nearly cold, add the whites of the eggs beaten to a stiff froth, and essence of lemon to flavour. Mix well and bottle for use. To prepare a glass of Boston cream put one tablespoonful of the mixture into a glass, fill up with water, and stir in as much carbonate of soda as will lie on a sixpence. Mix well and serve.
