FOR SUNDAY’S SUPPER
DATE AND WALNUT TART. Place 2 cups milk in a double saucepan, add J cup brown sugar, and a good pinch salt. Mix 2 level tablespoons plain cornflour and 2 level tablespoons plain flour with a little cold milk until smooth, then add to milk, etc. Stir until mixture thickens, then add the beaten yolks ot 2 eggs. Cook for 1 minute only to set the eggs. Now add 2 level tablespoons melted butter and stir until well mixed in. Now add 1 cup chopped dates, I cup chopped walnuts, and vanilla to taste. Allow to cool a little, then fold in the eggwhites, beaten to a stiff froth. Turn into a well-baked tartshell and decorate top with half walnuts. Melt J cup sugar in a saucepan, and when it becomes a rich brown add cup boiling water and stir until dissolved. Cool slightly, then pour over top. Chill well before serving.
