THE PICNIC SANDWICH
CABBAGE COMBINATION. Clever picnic box packers can think of many different sandwich combinations for fresh crisp cabbage leaves. Cabbage goes well with dark breads — whole wheat, nut, or brown bread —as well as white bread, and can be used chopped or shredded, or the whole leaves can be used like lettuce. Among delicious sandwich fillings using cabbage are: sliced or chopped tongue with minced cabbage; flaked fish with minced cabbage and salad dressing (especially good in long rolls), plain shredded cabbage with or without dressing; chopped cabbage, cottage cheese, raisins and boiled salad dressing.
Butter and margarine consumption in relation to income has been reported on to the Oxford Research Institute, after the weekly expenditure on food of 38.000 people in sixteen towns in England and Wales was analysed. The survey covered the period May to June, 1938. Throughout the income groups butter consumption increased steadily with total food expenditure; margarine decreased, but much more slowly than butter increased. All classes used about I Joz. of margarine a week, but while the very poorest consumed almost as much margarine as butter, the richest families used from seven to eight times as much butter as margarine. The point of satiety for butter appeared to be 13oz. a week, for after this rate of consumption the extra food expenditure is spent on other articles.
