“ALMOND” ICING

HOW TO MAKE IT WITHOUT ALMONDS. Ground almonds will be almost unprocurable this Christmas, so many Christmas cakes will be denuded of the traditional almond paste. An excellent substitute can be made by using breadcrumbs and almond essence. Crumble stale bread —two days old is best —and use the same quantity as 1 that of ground almonds stated in your recipe. Add icing sugar —slightly more than in the usual recipe—moisten with beaten egg, and mix to the desired consistency. Lastly, add the almond essence. This paste will harden and can> scarcely be detected from the genuine almond paste.
