PINEAPPLE AND ORANGE MOULD

Peel and remove all pith from four oranges. Cut into slices, not too thin. Drain 1 small tin crushed pineapple and soak I‘. level tablespoons gelatine in juice, then dissolve over boiling water. Allow to cool, then add 1 tablespoon lemon juice and a few grains salt. Sprinkle orange slices with sugar and allow to stand for 1 hour, then add juice to pineapple. Allow mixture to half set, then add pineapple. Lastly add pint whipped cream. Place a layer of orange overlapping each other on the bottom, of a round mould or basin. Add a layer of pineapple, then a layer of orange. Continue until mould is full. Allow to set. turn out. and serve with cream or boiled cus-, 1a rd.
