TWO DINNER DISHES
PUT THESE ON THE MENU. These dinner dishes should be on the menu: — Apricot Rolls. Soak Jib. dried apricots overnight, drain well. Then add enough hot water to just cover them. Cook until soft with enough sugar to sweeten. 'Rub through a sieve. Make a shortcrust, about Jib. mixture will do, roll out about one-third of an inch thick, spread with apricot mixture within. 1 inch from edge, roll up like a Swiss roll, then cut into about 2-inch slices. Place slices in a well-greased bakingtray, put a little butter on top of each slice, and bake for about 25 minutes in a fairly hot oven. Serve hot with lemon sauce. • Medley Pie. Mix together, 1 cup peas (cooked), 1 cup cold cooked and diced potatoes, J cup cooked chopped celery, 1 tablespoon minced onion, 1 teaspoon chopped parsley, 2 cups cold meat cut into small squares. Moisten with 2 cups cheese-flavoured sauce; place in pie dish, cover with puff pastry, and bake in the usual way.
