FOR SUNDAY’S SUPPER

ORANGE SOUFFLE. Soak 2 level tablespoons gelatine in I cup cold water. When quite soft, melt it with another .} cup boiling water. Add H cups orange juice. 2 tablespoons lemon juice. Allow this to partially set. but not firm. Beat together 4 cup sugar and the yolks of 3 eggs until very thick and almost white. Beat the whites until very stiff, gradually add 2 tablespoons sugar, and beat like a meringue, beat .; pint cream until stiff and fold all the mixtures together with the grated rind of 2 oranges. Turn into a souffle dish, allow to set. and decorate with slices of oranges, previously soaked in a little sherry, and sugar to taste.
