TASTY FOR LUNCHEON
TWO GOOD DISHES. Try these two dishes for luncheon: — Brain Cakes and Bacon. Soak a set of calves’ brains in salt water for 20 minutes, then remove membrane. Place in saucepan with enough cold water to cover, bring to boiling point, then pour off water and add some fresh cold water, 4 or 5 peppercorns, blade mace, 1 peeled onion, salt. Bring to boil and simmer for 10 minutes. Drain well and chop finely. Add 1 cup very thick white sauce, 1 teaspoon chopped parsley, and J level teaspoon grated lemon rind. Form into flat cakes, roll in flour, egg, and breadcrumbs. Fry in boiling fat until a golden brown. Drain well and serve with rashers of grilled bacon. Stuffed Vegetable Marrow. Peel and trim a marrow and scoop out the middle. Peel and chop 3 large onions and fry in a little good dripping until soft, but not brown, add 2 cups cooked rice, 4 large sliced tomatoes, 1 teaspoon chopped parsley, 1 tablespoon chopped ham, 2 tablespoons fine white breadcrumbs, salt and pepper to taste. Fill marrow, place in a well-greased baking dish, and bake in a moderate oven for about 45 minutes. Serve with a well-flavoured tomato sauce.
