SOMETHING FOR LUNCH

VEGETABLE LOAF. Soak J-cup lima beans and |-cup lentils overnight. Next day boil in salted water until quite soft, then rub through a sieve; add. J.-cup fine chopped and cooked celery, J-cup diced and cocked carrots, 2 tablespoons grated onion, 2 teaspoons chopped parsley, 1 tablespoon peanut butter, pepper, salt, and a little grated nutmeg to taste, 1 cup fine white breadcrumbs, 1 tablespoon melted butter, 2 eggs, well beaten, 1 cup milk or vegetable stock. Mix all well together and place in a wellgreased square tin and bake in a moderate oven for 30 minutes. Turn out and serve with a well-flavoured sauce.
