TASTY FOR BREAKFAST

STUFFED MUSHROOMS. Peel. wash, and dry 12 large mushrooms. Chop 6 more into dice, fry them in a little butter with 3 or 4 eschalots until cooked, but not brown. Add 1 heaped tablespoon finely-chop-ped ham. 1 dessertspoon finely-chop-ped parsley, salt and pepper to taste. Mix well together with enough brown sauce to bind mixture together. Fill ihe mushrooms with this mixture, place on a well-buttered tin. sprinkle with fine white breadcrumbs, place a dot of butter on top of each, and bake in a hot oven for 10 minutes. Dish up and serve with Dot buttered toast.
