SPICED PEARS WITH RICE. Well wash 4oz rice and blanch in I cup boiling water. Pour off water and add 1 pint milk, 1 dessertspoon sugar, and a piece of stick cinnamon or thin lemon rind. Cook carefully until rice is tender and all. the milk absorbed. Press into a basin previously rinsed with cold water. Allow rice to get cold, place on a serving dish and place pears round rice. To spice pears, peel as many pears required, leaving them whole and the stalk on. Make a syrup in the usual way, add 2 slices lemon, 2 bay-leaves, 6 cloves, piece of cinnamon bark, a few drops brown colouring, and a few drops red colouring. Cook pears until tender and well coloured, remove pears, and cook syrup until very thick. Pour over pears, thus giving them a glazed appearance.
