POTATO FARCIES WITH SPAGHETTI. Scrub as many large potatoes as required and boil them gently in salted water until cooked, but not broken. Cool a little, then slice a piece off the top and carefully scoop out the middle, leaving a case. In the meantime, cook some spaghetti in plenty of boiling salted water until quite tender, drain well and chop it a little, add enough white sauce to bind it together, but do not have it stodgy; flavour with grated cheese, salt, pepper, a little paprika, and, if liked, a little shredded ham. Fill potato cases with the mixture; mash the potato centres well, add a little butter, pepper and salt, and the yolk of 1 egg. Pile on top of potato case, cover with the top; rub over with a little good dripping, and bake in a hot oven for 15 minutes or until potatoes is piping hot.
