CONDENSED MILK CARAMELS
HOW TO MAKE THEM. Melt l:joz. cocoa butter: take off fire and add lloz. cornflour and mix well together. In a large pan. place lOAoz. icing sugar. 7oz. glucose, cocoa butter, etc.; bring to boiling point, add 1 |oz. butter and boil until 260 degrees F. Turn gas very low. and add !, tin condensed milk. 1 teaspoon vanilla essence, and. if liked, a few spots caramel colour. Pour into greased tins and when cold cut into squares with a sharp pair of scissors. This is a very soft caramel, and if wanted harder boil mixture to 265 degrees F.
