SOUR MILK

HAS MANY USES. Sour milk has many uses and should not be thrown away. Scones, cakes, and nutbreads are lighter if made with sour milk instead of sweet. Delicious little rolls can be made by sifting together lib plain flour, half a teaspoon bircarbonate soda, and half teaspoon cream of tartar. Mix to a dough with half pint of sour milk. Form into small rolls or crescents, nut on a greased tin. and bake at once in a hot oven for 12 to 15 minutes. When nearly cooked brush with warm milk. To make sour milk cheese, let the milk stand until it is thick, then pour into a muslin square, tie it up and hang to drip for 20 hours or more. Flavour with salt and put into a circle. Many people will like sour milk served with stewed fruit. Flavour it to taste with sugar and a pinch of salt.
