JUGGED PEAS

A PLEASANT VARIATION, There could hardly be such a thing as too many peas, but jugged ones make a very pleasant variation. Put the shelled peas into a jar with a screw top, add a tablespoon of butter, a saltspoon of salt, a teaspoon of castor sugar, a dozen mint leaves and a suspicion of black pepper. Put on the’ lid and place the covered jar in a saucepan of boiling water to reach halfway up the jar, and boil quickly for half an hour. The result is delicious.
