CURRIED LETTUCE

A DANISH DISH. If you have more lettuce than you need for salad, there are appetising ways of cooking it for a change. You can braise it in "good rich stock, casserole it with onions and herbs, or, for a really unusual dish, you can try this Danish curry. Boil two or three .good heads of lettuce in salted water, keeping them as whole as possible. Remove the rough outer leaves and drain well. Now fry one onion, half minced apple in loz. butter, stir in gently two teaspoons of flour and one teaspoon of curry powder. Mix well, cook for seven minutes, then a’dd half pint liquor in which the lettuces were boiled.

Season with pepper and salt and just a dash of cayenne. Strain, and pour over the prepared lettuces just before sending to table. Serve immediately.
