HONEY AS SUGAR
POSSIBLE REPLACEMENT VALUE. OTTAWA. Canada, which is an important honey producing country, is considering diverting a large portion ol this product to domestic uses as a substitute for sugar. Large quantities of Canadian honey were formerly exported to European countries. An .official report by the Canadian Department of Agriculture says tha “honey is a super-sat-urated solution of sugars and as such may be satisfactorily used to replace other sugars in cooking, canning, or preserving .... Perhaps the chief advantage of substituting honey for sugar in cooking is that the final product will remain moist for a much longer time than if sugar alone is used.” 1-?- . —: 1
