MUCH-WANTED RECIPE. Take 1 cupful castor sugar, 3 eggwhites, )>. tcaspoonful lemon essence, J teaspoonful salt, cupful milk, 3 drops almond essence, 2 cupfuls flour, 3 teaspoonfuls baking-powder, 3 cupful desiccated coconut, !, cupful butter, water icing, angelica, and yellow sweets to decorate. Beat butter and sugar to a smooth cream. Stir in almond and lemon essence. Sift flour, salt, and bakingpowder together, then stir in alternately with the milk to the butter and sugar. Add the coconut and beat well, then fold in the stiffly-frothed eggwhites. Bake in a well-buttered caketin for forty-five minutes. When cold cover with water icing and decorate with strips of angelica and small, round, yellow sweets.
