TRY THESE TWO. Put a little broken ratafia biscuits in the bottom of the glass and soak with sherry or wine. Then mash banana to a pulp and mix with whipped cream and a little sugar. Sprinkle with chopped nuts, if liked, and garnish with a cherry or a blob of fruit jelly. Desserts of this description are much better served in individual longstemmed glasses. Fruit whips, flummeries, apple snow, and so on, readilj 7 suggest themselves as an alternative to the banana sweet, and they are always popular on the summer menu. A posy salad is simply and speedily made from pineapple, bordered by symmetrical rings of new potatoes, rosy beetroot, fresh green cucumber, and endive. Place a ring of pineapple in the centre of a round dish, and put a large prune on top. Arrange little sprigs of watercress all round the pineapple. Now slice the potatoes, placing them closely round the watercress. Slice the beetroot and cucumber thinly, and arrange these in overlapping alternate rows, finishing die posy effect with a garnish of curly en-| dive or lettuce leaves.
