SPINACH RISSOLES

SOMETHING UNUSUAL. Boil and mash half a pound of potatoes. In a separate pan cook half a pound of spinach, chop finely, and add to the potatoes. Stir in one teaspoonful of mixed herbs, then beat one egg to a froth and stir into the other ingredients. Mould into rissoles, dip into a well-beaten egg. roll in breadcrumbs, and fry a golden brown in boiling fat.
