MIXED VEGETABLE SALAD
TRY THIS DISH. Take 6 radishes. 1 bunch young carrots (cooked), 3 gherkins, 1 small cucumber, 1 small beetroot (cooked), four (cold, cooked potatoes, A dozen eschalots or 1 small onion, salt and pepper, J cupful mayonnaise or salad cream, lemon juice. Mince the eschalots, slice the potatoes. Mix together in a salad bowl. Add lemon juice, salt and pepper, also the mayonnaise. Cut the radishes, carrots, gherkins, and cucumber into thin slices, keeping each kind separate. Cut the beetroot into small cubes. Mix any uneven pieces of the vegetables with the potatoes. To finish the salad, heap the potatoes up. Smooth them over an<j cover them neatly with circles of each kind of vegetable, cucumber round the base, then carrots, radishes, and gherkins till all are used.
