SOMETHING APPETISING

STRAWBERRY MERINGUE. Shortcrust, castor sugar, strawberries, egg-whites for meringue. Line a fireproof glass tart plate with rich short-crust. Cover with a paper and fill with rice, then bake till crisp, remove rice and paper, and fill up with strawberries and sprinkle thickly with castor sugar. Make a meringue with egg-whites whipped very stiffly, adding sugar to taste. Cover tart with meringue and crisp in the oven.
