TWO TASTY RECIPES. These are two tasty recipes:— Flaky Pastry Take Jib flour, 3oz butter, 4oz lard, x pinch salt, water. ; Sift flour with salt. Rub in butter j and mix to a stiff paste with water. Put lard on well-floured board and 1 press out into thin pieces with rolle ing-pin. Roll out pastry to a square shape. Cover with lard and fold pastry sides to centre, both ways, then over in half again, to form a square. t Roll out and bake in a hot oven. >z Puff Pastry Take Jib flour, Jib butter, ice cold r water. Cut butter into three equal portions. J Wash and shape each into a long , block. Wrap two blocks in white - paper and place in a cold place. Rub remainder into flour. Mix to a smooth n paste with icy cold water. Turn on f to a floured pastry-board. Knead n into a ball. Flatten lightly and roll e out to an oblong a quarter of an inch d thick. Lay one block of butter in the a centre and roll up like a Swiss roll, d Flatten lightly and roll out to a quars ter of an inch thick. Place remaining n block on top and repeat process. Fold i- and roll out four times. Stand away e in a cold place till very firm. Use for covering pies or tarts and for making e patty-cases and vol au vent cases. Bake i in a hot oven.
