RELIABLE METHOD.

Cut up the fat if necessary and put it in a saucepan barely covered with cold water. Boil till it looks shrivelled. Then strain through a coarse strainer to get out pieces df skin, gristle, etc, and let the liquor stand till the fat settles as a thick layer on top. Take this off when solid, and repeat the process if it is still not pure enough.
