SMOKED FISH AND PARSLEY SAUCE. One smoked fish, loz butter, -> pint milk, 1 dessertspoon flour, pepper to taste, 1 dessertspoon chopped parsley, 1 dessertspoon butter for top of fish. Cut fish into suitable pieces, place in a saucepan, cover with water, add a few drops of vinegar and bring slowly to the boil. Pour water off, grease a baking dish and lay fish on it, skin side down. Pour milk over, season with a sprinkle of pepper and bake in a moderate oven 15 minutes or longer. Then lift on to a hot dish, put a little butter on top, blend flour with a little cold milk, stir into boiling milk, cook three minutes, add parsley and pour over fish. Garnish with lemon and parsley.
