CODDLED EGGS
FOR ACUTE INDIGESTION. A woman was told to give coddled eggs to a member of her family who was suffering from an acute form of indigestion —indeed, an affliction more distressing than mere indigestion. What is a coddled egg? The “cod-, dling” is devised to keep the white of the egg soft and creamy. Ordinary boiling or poaching does not achieve this to the extent, that is desirable when an adult invalid or delicate child is “on a diet.” The method is to pour boiling water into a saucepan and put the egg gently into it. Cover the saucepan at once and keep it close to the heat of the stove, but not over the heat. It is necessary that the water shall remain just under boiling point. After eight or nine minutes the yolk will be set acceptably for the patient, and the white will be in accordance with the doctor’s orders, and will help towards the . recovery that will come with care, patience, and restraint. In the opinion of many doctors the restraints include “no smoking.” That is the worst 'blow of all to some people. 'Can no one invent a coddled cigarette?
