FRUIT SALADS
THESE ARE WORTH TRYING. Filbert Fruit Salad. 1 cup white cherries, pitted 1 cup red cherries, pitted 1 cup diced oranges 1 cup diced pineapple 1 cup chopped celery and 1 cup filbert nuts. Serve on Lettuce leaves with Mayonnaise blended with Whipped cream. Frozen Fruit Salad. J cup each of the following canned fruits cut up in small pieces: apricots x. peaches pears pineapple white grapes Maraschino cherries. Add to these the juice of 1 lemon. Drain off the fruit juices and add enough Water to make 1 pint liquid. To this add 1 cup sugar and bring to a boil. Pour over 1 package orange-flavoured gelatin. When cool, add the fruit. Pour into . a tray and freeze. Serve with Whipped cream. Arabian Salad. 6 canned pear halves j cup chopped figs > cup chopped dates | cup chopped almonds. Blend with 1/3 cup mayonnaise to which the juice of | lemon and 1/3 cup whipping cream has been added. Serve on Lettuce leaves. Strawberry Ambrosia. Press 2 quarts of hulled and washed strawberries through a sieve. Sweeten well with sugar (the amount depends upon the tartness of the strawberries). Pour into a refrigerator tray, leaving in the grids, and freeze. These cubes of frozen strawberry juice may be easily pushed out. They are most handsome for dessert and are served either plain or with whipped cream. Special Fruit Salad, i One quart strawberries. Slice about two-thirds of them, but leave one-third to garnish. Split bananas in half and lay two halves on individual plates bedded with lettuce. Heap strawberries in the centre and diced pineapple at the ends. Top with a fruit salad dressing and garnish with whole strawberries. Tangiers Salad. Sprinkle 6 canned pears with the juice of 1 lemon. Mix 2 cup cream cheese with 1 cup nut meats j cup celery chopped and | teaspoon salt 2 tablespoons chopped pimiento and 1 tablespoon chopped chives or minced onion. Form lightly into balls and place in the cavities of the pears. Arrange on Lettuce and mix the Salad dressing with Whipped cream.
