RAINBOW CAKE. Cream together jib. butter, 1 cup of sugar, 1 teaspoon cinnamon; then add three eggs well beaten, one at a time; then gradually three-quarters of a cup of milk. Sift in three cups flour, two teaspoons baking powder, pinch salt; mix all together and divide into three. First portion add 1 teaspoon warm water with 1 teaspoon Cloudy Lemon Food Flavouring, mix lightly and put into an Bin. sandwich tin (well greased). To the second portion add 2 teaspoons of cocoa, thoroughly mixed with 1 teaspoon Cloudy Cinnamon Food Flavouring; mix lightly and put into the same, size sandwich tin. To the third portion add 1 teaspoon Cloudy Strawberry Food Flavouring, 1 tablespoon warm water, and a couple of drops of Red Colouring; mix lightly and put into same size sandwich tin. Bake about 25 minutes in medium oven. When cold, put together with a filling made with 6 tablespoons icing sugar, 1 tablespoon butter, 2 tablespoons coconut, 1 teaspoon Cloudy Strawberry Food Flavouring, 1 drop of Red Colouring, and a little milk, well beaten to a cream. Make icing .for top with 4 tablespoons icing sugar, i teaspoon Cloudy Strawberry Food Flavouring, and just enough milk to be able to spread nicely. This makes a very nice rainbow cake with a delicious flavour.
