FOR THE APPLE SEASON

THREE FAVOURITE RECIPES. The following will be found to be excellent apple dishes: — Apple Pie. Make a crust in the following way. Sift together 11 cups flour I teaspoon salt . teaspoon baking powder. Cut 4 cup butter into the flour. Add cup cold milk. Fill a pastry lined pan with Apples thinly sliced. Sprinkle with 1 cup sugar to which has been added 1 tablespoon flour. Shake on a little Nutmeg and Few drops of lemon. Add dots of butter. Cover with top crust and put in hot oven 425 deg F. When brown turn oven down to 350 deg F., and bake 45 minutes. Serve with cream and sugar. Four Apple Dumplings. Roll pie crust as for small pies. Place in center of each Apples (thinly sliced as for pie) and teaspoon cinnamon. Gather up outer edge of crust and pinch together at top. Make syrup of 1 cup sugar 1| cups water Butter (size of walnut) 1‘ teaspoon vanilla. Place dumplings in boiling syrup (top of dumplings to be above syrup). Boil slowly for 30 minutes. Brown in moderate oven. Fried Apples. Fry in Bacon fat 4 medium onions thinly sliced. When tender add 8 or 10 cooking apples pared and thinly sliced and | teaspoon salt. Cover and cook slowly till soft, stirring often to prevent burning. When soft remove cover and brown. If apples are very tart add 1 tablespoon sugar just before serving. Put in centre of platter and sur- ’ round with smoking hot Sausages.
