SOUR CREAM RECIPES

TWO FAVOURITES. These are two very popular sour cream recipes:— Three Egg Sour Cream Cake. Separate 3 eggs. Beat the yolks vigorously. Add lg cups sugar and mix well. Sift 2| cups flour and measure. Add to the flour I- teaspoons baking powder 1 teaspoon soda A teaspoon salt, and mix alternately with II- cups sour cream to the egg mixture. Add 1 teaspoon vanilla flavouring. Blend thoroughly. Beat the egg whites until very stiff, and fold into the cake batter. Bake the cake in two nine-inch layer pans, which have been greased and floured, and place in a moderate oven (375 deg F.) for 35 minutes. This cake is excellent with the following icing: Sour Cream Icing. To a cup heavy sour cream add 1 egg yolk and 2 cups powdered sugar, and mix until very smooth. Chop very fine 1 cup raisins 1 cup walnut meats and add to the first mixture. Add 1 teaspoon vanilla flavouring. If when completed the icing is too thin to spread, add enough extra powdered sugar to spread nicely. Sour Cream Marble Cake. After the Three Egg Sour Cream Cake is ready for the pans take | of the batter into another bowl. Put 1 tablespoon cocoa into a saucepan and add 1/3 cup water. Heat just enough to make a smooth chocolate paste and add to the | part of the batter. Place the larger portion of the cake in the cake pans and then take a spoonful of the chocolate batter and with the tip of the spoon trace a few little trails of chocolate over the light batter. Then bake, according to the former recipe. This cake is fine with a thin coating of chocolate butter icing.
