HOW TO PRESERVE THEM. To preserve French beans gather them young, place them in an earthenware jar or small barrel in layers 3 inches deep, with a thin layer of salt over each. Put a good layer of salt on the top layer and cover with a wooden cover with a heavy weight on it. When wanted for use, the beans should be soaked in cold water a few hours. Then cook as usual.
