FAMILY MEALS

VEGETARIAN DISHES. Although the following recipes are for vegetarian dishes, it is not necessary to be a vegetarian to appreciate them. More and more housewives are beginning to realise that vegetables and fruit should be the mainstay of the family meals, and that a diet which does not include a liberal amount of these nutritious foods is lacking in health-giving properties. The following recipes are suitable as luncheon or supper dishes, but could easily be used for the main meal of the day. Get away from that cooking rut you are in, and try these new and exciting dishes. Curried Lentils.

Four ounces soaked lentils, pinch of powdered mace, 6 peppercorns, 1 teaspoon salt, 1 onion, 1 apple, ounces butter, 1 banana, 1 tablespoon sultanas, j teaspoon sugar, 1 teaspoon flour, | teaspoon curry powder, 1 dessertspoon vinegar, boiled rice.

Simmer lentils with mace and peppercorns (tied in a piece of muslin) for one hour, then add salt, remove peppercorns and strain. In the meantime, slice onion, mince apple and fry together in the butter for 10 minutes. Place in saucepan with lentils, sliced bananas, sultanas, sugar, flour and curry powder.

Mix well, add liquor from the lentils, and simmer three-quarters of an hour, stirring frequently. Just before serving add the vinegar. Serve with a border of boiled rice. Curried Apples.

One tablespoon curry powder (less if not liked hot), 3 tablespoons breadcrumbs, 2 tablespoons grated cheese, milk, 3 cooking apples. Mix together the curry powder, breadcrumbs and cheese, and add sufficient milk to bind them together. Peel apples and hollow out the centres, then fill the cavities with the mixture. . Bake in moderate oven until apples are soft. Cheese Soup. One ounce butter, 1 small chopped onion, 2 cups milk, 2 cups water, 2 eggs, 2 ounces grated cheese, salt and pepper to taste, croutons of fried bread. Heat butter and saucepan and fry onion without browning it, then add milk and water. When* almost boilinf, add the beaten eggs, cheese, salt and pepper. Stir until soup thickens, but do not allow it to boil or it will curdle. Serve with the croutons. Boston Roast. One cup cooked haricot beans, 4 ounces grated cheese, 1 cup breadcrumbs, salt and pepper to taste. Mash the beans well and mix in other ingredients. Form into a roll and place in a baking dish with one tablespoon of dripping. Bake in moderate oven until nicely browned, basting occasionally. If desired, lentils or macaroni may take the place of haricot beans. Cheese Dumplings. Two cups flour, 1 cup milk, 1 egg yolk, 2 cups grated cheese, salt and cayenne to taste, tomato sauce. Mix the flour to a smooth paste with cold water. Boil the milk and stir in the blended flour. Stir over gentle heat until mixture is thick, then remove from fire and pour in beaten egg yolk. Add cheese and seasoning, form into balls and cook in boiling water. When the dumplings are cooked they will rise to the surface. Lift them out, roll them in grated cheese and brown under the griller or in the oven. Serve with hot tomato sauce and garnish with chopped parsley.
