"■ Brown Betty Take 3 cups tart apples, 2 cups fine breadcrumbs, -J- cup sugar, J cup water, 2 tablespoons butter, J teaspoon ground cinnamon, J teaspoon grated nutmeg, 1 ( lemon, J orange, milk or cream to serve. Melt the butter in a double boiler over hot water. Add the crumbs. Mix sugar, grated lemon rind, cinnamon and nutmeg together. Put half the buttered crumbs in the bottom of a buttered pie-dish. Spread lightly with half the apples and sprinkle with the sugar and spices. Add another quarter of the crumbs, lay in remainder of the apples and sprinkle with remainder of sugar and spices. Strain the fruit juice over. Sprinkle with the water and lay remainder of crumbs on top. Cover closely. Cook for J hour in the oven. ’ Uncover, brown quickly on top and serve with milk or cream. Vanity Fair Cakes. 4oz butter, 4oz sugar, half-teaspoon cloudy lemon food flavouring, 2 eggs, 6oz flour, 1 teaspoon baking powder, 2oz crystallised cherries, loz angelica. Cream butter and sugar and essence. Beat the eggs and add alternately with sifted flour, baking powder and chopped fruit. ■ Bake in greased patty tins for 12 minutes. Regulo No. 6; reduce to No. 5. Ice with butter icing and decorate each cake with a cherry. Lemon Meringue. Take 1 thick slice of bread, 1 pint milk, 2 eggs, 1 tablespoon sugar, 1 lemon, 2 tablespoons castor sugar. Break up the slice of bread (free from crust) into the milk "and boil in a saucepan till soft. Beat the egg yolks, sugar and grated lemon rind together. Mix these with bread and milk, and beat all together. Put the mixture into a well-buttered pie-dish and bake about 20 minutes in a moderate oven. Remove the pudding from the oven and allow it to cool. Whisk the egg white with castor sugar and lemon juice. When the pudding is cool, pour the whisked mixture on top and place in the oven for about five minutes to brown lightly. This pudding may be served hot or cold.
