THE RUSSIAN WAY
EGG PLANT DISHES. If you like mushrooms, egg plant, Russian style, will recall their taste to you. Cut 1 egg plant into thin slices, add J onion, chopped fine. Pepper and Salt them, and fry in Butter until they are golden in colour. Pour over them J pound sour cream and place for 15 minutes in □ medium warm oven. Here is another popular way of preparing egg plant in combination with other vegetables: Cut 1 egg plant into squares, then slice these into pieces the thickness of your little finger. Place these on a large saucepan or oven-tray. Add 1 or 2 tablespoons water and place tray in the oven until the slices are cooked. On another saucepan rnell Some butter, and fry 1 sliced onion and 1 sliced green pepper. When these are slightly fried, pour over them 1 can of hot tomato sauce. Now Salt the egg plant slices, Pepper them, and pour the contents of the second saucepan over them. Again place the egg plant in the oven, and 15 minutes before serving, pour over it some sour cream.
