Mix all together well and roll between hands into small balls. Put the balls into a wire basket and wet fry .till golden brown — about one minute. Serve with salads. Southern Sauce -J cup butter, 1.1 cups icing sugar, rum, lemon juice. Beat butter to a cream. Add sugar and cream well. Flavour to taste with rum and a few drops of lemon juice. Pear Ginger 61bs pears, ljlbs dry preserved ginger, 3 pints water, 51bs sugar. Boil water and sugar together for a few minutes. Add pear and ginger cut in slices. Boil slowly without stirring for four hours. Almond Rolls Jib flour, 1 teaspoonful baking powder, loz sweet almonds, loz ground almonds, loz butter, 2ozs castor sugar, 1 egg, 2 tablespoonfuls milk. -Blanch the almonds and cut them in fine strips. Mix the baking powder with the flour, rub in the butter, add the sugar, sweet and ground almonds. Then the well-beaten egg and milk. Roll out lightly on a floured board, cut into three-inch squares, roll each square. Put them on a wellgreased tin and bake at once in a hot oven 15 to 20 minutes. Mint Jelly Salad Pineapple, lettuce, celery, peppermint, essence, lemon juice, green jelly. Arrange a slice of pineapple on a bed of lettuce. Garnish with halfinch cubes cut from a green jelly flavoured with oil of peppermint and lemon juice. In the centre, heap chopped celery. Serve with French salad dressing.
