COLD MILK

SOME DELICIOUS DRINKS. Milk lends itself perfectly to variety in preparation of tempting summer beverages. Cold milk drinks are appetising and refreshing. Like other beverages, milk drinks may be dressed up and made more appealing to the eye and palate. Gay-coloured glass or soda straws will transform the simplest milk drink into a special treat. A dipper of ice cream in the bottom of the glass, a topping of tinted whipped cream or the addition of a little cherry or similar fruit juice makes a pleasant surprise. Chocolate or cocoa milk drinks are universal favourites. They may be made in a jiffy if a jar of cocoa syrup is kept in the refrigerator. It is easily made as follows: — Cocoa Syrup Mix to a smooth paste J cup cocoa andJ cup cold water. Add another 1 cup cold water and cook, stirring constantly until thick and smooth. Add l-Bth teaspoon salt and 1 cup’ sugar, and boil for about three minutes, stirring continuously. When cool add 1 teaspoon vanilla. Pour into a clean : jar and seal. After each using of syrup, cover the jar tightly. Chocolate Milk Whip. Mix 2 to 3 tablespoons cocoa syrup with J cup milk. Beat with egg beater, chill, top with whipped cream, if desired sprinkle with Nutmeg or cinnamon. Serve very cold. Bittersweet Cream Whip Mix 2 to 3 tablespoons chocolate syrup with J cup milk. Fold in i cup cream, stiffly whipped and sweetened with powdered sugar. Flavour with Vanilla. Milk Eggnog. Beat well 1 egg. Add 1 teaspoon sugar .? glass milk Sprinkling of cinnamon or nutmeg 1 teaspoon vanilla. Mix well and chill thoroughly before serving. Lemon, orange, or prune juice add pleasing flavour to eggnog. The grated rind of lemon or orange may also be used. For a fluffy eggnog, the white of the egg may be beaten separately and folded in last. For . a chocolate eggnog, add 1 teaspoon chocolate syrup.

Fruit Milk 2 to 3 tablespoons fruit juice 1 cup milk 1 to 2 teaspoons sugar Beat well with egg beater and serve ice cold. Pineapple, cherry, strawberry, or grape juice is especially good in this. Banana Milk Fluff. Mix well and beat with egg beater 2-3rds cup mashed bananas 3 tablespoons orange juice ’ 3 tablespoons honey l-Bth teaspoon almond extract Few grains salt 2 cups milk. Garnish with Whipped cream and sprinkle lightly with Cinnamon or nutmeg. Root Beer Fluff Combine 1 teaspoon root beer 1 to 2 teaspoons sugar J cup cold milk and beat with egg beater. Top with Whipped cream and serve cold.
