TOMATO RECIPES

TREE TOMATO JAM. The quantities are: —41b of tree tomatoes fairly ripe, and 41b of sugar. Peel and cut up tomatoes into quarters and leave overnight with half the sugar sprinkled over. Next morning boil them for about 20 minutes, add the remainder of the sugar and boil till you think it will set. To skin the tomatoes easily pour boiling water on them.

Another recipe is as follows: —Take 41b of ripe tree tomatoes,. 41b sugar and 2 cups water. Cover the tree tomatoes with boiling water for a few minutes. Then peel and cut them up in slices, add the 2 cups of water and bring to the boil; then add the 41b of sugar and boil till the jam sets when tested. TREE TOMATO CHUTNEY.

A recipe for tree tomato chutney, which may appeal to readers, is: — Scald, skin and' cut up 2 dozen tree tomatoes. Add lib apples, cut small, Joz mixed spice, one tablespoon of salt, 21b brown sugar, lib onions, 1 pint vinegar and 1 teaspoon cayenne pepper. Boil all together for 2 hours (slowly).
