SIMPLE DESSERTS
FOR CHILDREN’S MEALS. With an exciting looking dessert parked right by one’s glass of milk, a reluctant child finds the spinach or carrots or tomato soup much easier to down than was expected. Simple and nourishing puddings satisfy the appetite for sweets. They save work for mother as they are so easy to make. Sponge cake cut in rounds and served with hot lemon'sauce is liked. The vanilla and chocolate flavoured puddings put up in commercial packages are thickened with arrowroot and very good. The vanilla is delicious served in a sherbet glass topped with sliced banana and whipped cream. Apple Tapioca Apple tapioca can be fixed in a . jiffy. Bring '
3 cups of water to a boil in a saucepan. If a glass pan is used there will be but one soiled dish. Add 1 cup minute tapioca 4 apples sliced thin Pinch of salt and Nutmeg and Small amount of grated lemon rind. Simmer until apples are very tender and tapioca clear. Peaches may be used instead of apples. Serve cold with cream. Prune Whip Prune whip, light and fluffy, seems like eating air from fairyland. Stone and put through a sieve 1 cup cooked prunes that are very
tender. Beat 4 egg whites until stiff. Beat in gradually 4 tablespoons sugar and Pinch of salt and the prunes. Place pudding in buttered baking dish set in pan of warm water. Bake at 275 deg F until brown and puffed up. Serve cool with whipped cream or custard sauce.
