FREEZING METHODS
CONFERENCE IN SYDNEY. SYDNEY, May 18. The first Australian and New Zealand congress of refrigeration and dairying, which is being held in Sydney, has heard all phases of refrigeration discussed by leading authorities here and abroad. Nearly a score of papers has been read on cognate subjects. The New Zealanders who read papers were Mr A. S. Mitchell, “Insulation of Refrigerated Premises”; Dr W. J. Wiley, “Some Factors Affecting the Keeping Quality of Butter in Cold Storage”; Mr F. W. Grainger, president of the New Zealand Association of Refrigeration, “The Influence of Mechanical Refrigeration on the Dairy Industry in New Zealand”; Dr F. H. McDowall, “Neutralisation of Cream for Buttermaking”; Mr I. R. Sherwood, “The Role of Lactic Acid Bacteria in Cheese Ripening.” Mr W. Taylor, New Zealand Trade Commissioner in Australia, was among the speakers at the formal opening of the congress.
