KEEPING BUTTER

STORAGE IN EARTHWARE JAR. It is best to salt butter for keeping immediately it is made. The butter is churned in the usual way from carefully ripened cream. Wash well in the granulated state with at least two washing waters. Sprinkle salt on at the rate of 3oz to the lb. Partly work in, and afterwards allow the butter to stand for a few hours for the salt to dissolve, then complete the working and get as dry as possible. Pack into an earthenware jar, as tight as possible and cover with parchment and a layer of dry salt. Keep the jar in cold store, or as cool as possible. Well-made butter will keep for six months or longer.
