"Wholesome" recipe
Here is the second of our "wholesome recipes" column, for a tasty, interesting change. Bean & Tomato Bake We bake this dish in a crockpot which is an excellent way to combine the flavours of this sort of dish, especially when the beans are pre-cooked. However, without one a casserole dish in a low oven will work well. 2 cups dried Garbanzo beans (chick peas). Soak and cook or cook in a pressure cooker. Put in a casserole dish in this order:
1/4 cup oil, 1/2 cup^ sliced onions, 2 cups chopped carrots (large), 3 stalks sliced celery, 1 cup mushrooms, 2 teaspoons salt, 2 teaspoons garlic powder, 1/2 teaspoon black pepper, 2 teaspoons sweet basil, 1 teaspoon thyme, 2 teaspoons paprika. Fill the casserole dish with cooked beans and add: 1 cup tomato puree, 1/4 cup sugar, 1/4 cup red wine, 2 bay leaves. Cover and leave in the crockpot or a low oven for four hours. This bake has been designed especially for simplicity in preparation and servings.
