Dalefield.— Fairly clean in flavour, slightly open in make, firm, solid cheese. Tararua.— Fairly clean in flavour, fat, open in make. Greytown. Flavour slightly weddy, open texture (due to fermentation). Mangarania.— Fairly clean in flavour, olose texture, badly packed. Taratahi.— Bad flavour, open 'in make.
