To New Zeal'anders who have personally investigated ,the dairy-fac-tory work of Denmark the o ly feature which has 1 appealed to them as being in any measure iro advance of the system iof co-operative buttermaking Bai vogue in the Domiinioau .was tlua attention to small details, economies in- apparently mlttor matters, which in the aggregate represent a not inconsiderable reduction iin cost of manufacture. An instance of thb policy of thrift is- the use in .some Danish butter- factories of a miik-diraiaung stand, on which milk cams' are inverted' as soon as these© arce emptied of theair contents, in order that every drop of milk may be saved. Danish authorities declare that the cost of these drainingstands, wel-made appliances, have foecm covered' by thci jsoving effected ■in onlly ia few months., and that the ainnual economy effected a good reduction in the expenses' of management. TJiis conveys ai good idea of the very careful' work of the industrious Dane. While, however, it may pay <in Denmark, where the individual milk supply ds small' ' (often as mainy as 1-10 suppliers heilng necessary for a daily ©\itput of a ton of butter), and IDabour m cheap, it would he impracticable' under our conditions.
