The Tasmanian Agenl-G;eneral has been drawing attention to the commercial production of casein, which is said to be worth 30s per cwt. in England. This preparation is evaporated, and lactose is obtained, worth 45s per cwt. Whether this'is used for the purpose of food in the shape of soured .milk, which is now a favourite article of diet, and which has been oalled the ' 'bacillus of long life," or whether it is made dn£o the substance from which billiard balls and--buttons are manufactured, he does not say. He gives pa.rticuillaa'.s of the plant needed to treat 500 gallons per diem, estimated' to cost £2OO. Already there is a demand in New Zealand for the casein from skim milk, and one firm is offering a, price for it to various factories, but it is not liMy to be accepted, as dairy farmers think they can make more out of pigs and calves. It is said to mean a penny extra for the butter-fat, and the whey returned instead of milk.
