A FRUIT CAKE RECIPE.

DELICIOUS BUT CHEAP.

Take two pounds' of flour, three teaspoonsful of baking powder, pinch of salt, half a pound of moist sugar. Mix all thoroughly together, rub in quarter pound each of lard r.nd butter ; clean one pound of cro.rrants, and half a pound of sultana raisins; cut up into . small pieces, quarter pound of candied lemon and orange peel, and mix these with the other ingredients to form a stiff paste; place in bread or cake,tins lined with greased paper, about three parts full; put greased paper on top to prevent from browning too quickly ,and bake in a moderate oven from one to two hours. To make certain it is done, stick a darning-needle in the centre of the cake/ When the needle is withdrawn ,if clean,- the cake is finished. This is an excellent cake to serve at afternoon or morning teas, and guests'will appreciate it all the more if served with "Elephant" brand tea, one of the nicest of nice teas. "Elephant" brand tea has a distinct and pleasing flavour, the liquor is strong and of a fine tawny colour. It .costs only 23 2d per lb, and may bo obtained from I practically every grocer in your disI triet.
