Sic, — Now that the brbad question is again agitated, and there is a probability of people baking their own bread, I beg to forward 3'ou an extract from Mr Warren's analysis of bread-stuffs in 1856,, which may assist those of your readers who consider the leakers' charges exorbitant to bake a good wholesome loaf. The following is the scale laid down by Mr Warren : — For private families, take 151 b of wheaten flour, place it near the fire to warm before using ; 51b of potatoes— peel and boil them as if for the table (the mealy ones are the best) ; mash and rub' them fine with the hands, and then mix cold water with them ; be sure to' have all the | lumps well mashed ; pour into* the flour ; add yeast, and mix in the usual way. Bread made according to this, plan is much superior to that made of flour only ; and on this ground alone Mr Warren recommends its adoption, even if potatoes were the same price as flour ; but in addition to that, taking the present high price of flour, and moderately low i price of potatoes in this district, here is a saving of over 20 per cent., which is surely an object- worth, attending to, especially by those of limited means.
