NEW ZEALAND BUTTER AND CHEESE.

The National Mortgage and Agency Company have received advices from: their London office, dated April 6, of | the sale of shipments of potted butterj and cheese, on account of clients and factories, with following remarks;— “ Potted Butter:—We sold at 70s per cwt. The butter was in good condition and of good colour, but was rather salt ■ and a little coarse. The consignments from your North Islandi client sold at 84s per cwt. This also: arrived in good condition and fair quality, but was wther salt. We are pleased to see that clients are improving the quality but there is still a great deal to be desired in this direction, : and we would again urge on you to impress shippers with the fact that quality is of the first consideration. Seconda r y and inferior sorts are very difficult to deal with, and values rule most irregularly. We would call your attention to the marking of the kegs. Marks should be stencilled on if possible in bold characters, so as to be distinguishable at a glance when called for examination by intending purchasers. Much confusion has arisen at this end from small and indistinct marking, both at discharge of ship and subsequently. Cheese. —We have cleared another shipment at 50s per cwt. The cheese was in perfect condition and quite tit for table, wss of good quality (although this could be improved) ; colour was good. It would be an advantage to shippers to impress a brand on first class cheese, as it would certainly be an advertisement j but it would be useless trouble to brand cheese of inferior quality. Stilton cheese would certainly find a market here, but we doubt if it would fetch an extra price proportionate to the extra trouble. Our idea is that shippers would do well to confine themselves to the Cheddar shaped cheese, which should be rich in quality, clean, flavoured, not crumbly nor holey.
