Sir, —I obserre by your paper of today that the top market value of prime milling wheat at Timaru is quoted at from 2s fid to 2s 8d per bushel, yet the bakers here charge us fid per 41b loaf ; and again, beef is quoted atJlss per 100 lb, or a fraction over l|d per lb, and fat sheep quoted at per lb, snd yet the butchers charge 5d per lb for the former and 3£d for the latter! I believe in all trades obtaining a good fair Hying profit by their trades, but when it comes to double and treble the first cost pricesetting aside the ralue of the offal—it is overdoing the thing very considerably.—l am, etc., Inhabitant.
