OUR DAIRY PRODUCE.

AT THE WINTER SHOW. SUCCESS OF MOA FARMERS. Dairy produce, which lias played such an important part in the development of our district, and without which no show could be considered complete, has been given a position this year in the main hall of the Winter Show, where it is attractively benched. The magnificent trophies that are annually competed for are conspicuously displayed, and add their quota to the importance of the exhibit, which both in butter and cheese shows- a slight falling off compnred with last year. In butter Taranaki is strongly represented, and the Moa Farmers' Dairy Co. (Tnglewood) carries off the bulk of the prizes, scoring four first awards, a second, also winning one points prize, ond ticing with Masterton in another. Thip is a record of which Mr. W.' M. Ross, the manager, lias even- reason to be proud. Masterton Dairy Company (C. Hopkins) wins the Lovell and Christmas 75 guinea cup, which has been in competition since 1899, for the third year in succession, so that it becomes their property. The judges (Messrs. F. TJiomson and N. Fulton) remarked that the flavour of the butter on the whole was good, while in the majority of entrjes they did not remember such closeness in quality. The body and texture were also of a high standard, as indicated by the score cards. Defects were in evidence in some cases in want of uniformity of color, while a few lost points in finish, not having solidified the butter in the process t>f packing. This latter fault is, the judges affirm, one requiring the attention of makers, as. when holes are left around the block air is not excluded, which is detrimental to the keeping quality. Appearance also goes a long way in the eyes of the prospective buyer and while these defects are present, the package is very unsightly. In cheese there, is the greatest falling off in exhibits, the bulk of the competitors and prize winners coming from outside. Indeed, it is surprising the lack of interest taken in the competition by factories in Xorth Taranaki. T)aleofi!d, Kuku, and Rexdale, are the principal prizewinners, whilst Mahoe wins in the class open to Taranaki only. The judges say: While the quality of the cheese exhibits is a pleasing feature, it is regretted that the number of entries shows a considerable fnllincr off. The bulk of the entries come from outside Taranaki, and consequently, the bulk of the prices go outside, but- the quality of the article produced by those Taranaki factories that are exhibitors compares favorably with the best in the show. The outstanding feature of the entries as a whole is the uniform flavor throughout, Ibis- being more marked than in former years. The body and texture is also of a high standard, in the majority of cases, although sever.il entries are of a somewhat harsh nature. There ib also a degree of uniformity as regards finish which is pleasing, the majority of entries being well bandaged and jree from mould growth. Low and even temperatures are recognised as essential to the proper maturing of cheese, and the treatment received while in the cool store of the Taranaki Producers Freezing Company no doubt partly accounts for the uniform quality shown.
